Arepas
Arepas is an everyday snack and meal in the Colombian culture. We have arepas with pretty much anything. A typical Colombian has arepas with bread and coffee in the morning. there are a different type of arepas, the main three are- Arepas con Queso (arepas with cheese)
- Arepas de chocolo (Colombian Corn Cakes with Fresh Cheese)
- Arepas regulares (regular arepas)

My personal favorites are arepa de chocolo and arepas regulares. For breakfast, at times I heat up an arepa (purchased at the supermarket) and put sliced tomatoes on top with a little bit of salt and a cup of black coffee. On rear occasions on a Sunday my mother and I make homemade arepas to accompany a homemade chicken soup for lunch. When my mother was younger she told me that she would wake up at 4 am every morning to grind the corn on order for her mother to make the arepas for all 12 children and the workers that worked in the farm.
What you need:
- 1 cup warm water
- ½ tsp salt or to taste
- 1 cup pre-cooked white corn meal or P.A.N
- 1 tbsp butter
- 1 cup shredd mozarella cheese
How to make it:
Step1: Mix the water, salt, corn meal, butter and cheese in a bowl large enough to create dough.
Step2: All ingredients are mixed well and the dough has a soft consistency. If the dough is too dry, add a little bit more water. If it's too moist, add more corn meal.
Step3: Forming balls the size of a medium then make then flatten it with a rolling pin to your desire thickness.
Step4: Grill for 5 minutes on each side or until golden brown.
