Buñuelos

Buñuelos
Buñuelos is a typical pastry that we eat during the holiday season. Buñuelos are served with a "cake" that looks like a fan but it is called Natilla. Buñuelos are one of the Colombian bread that I do not like. Other people love them, I personally don't like them because I feel that they are very greasy. I believe my mother had an influence on that because she as well doses no like Buñuelos. During the holidays when the family gets together my cousins make Buñuelos and bring them to the house. A tradition that we have is that everyone makes a dish or pastry to bring to the holiday party.

What you need:
  • 1½ cups grated queso fresco (cheese)
  • ½ cup grated feta cheese
  • 1 cup cornstarch
  • ½ cup  cassava, tapioca, mandioca starch
  • ¼ cup sugar
  • 2 eggs
  • 1 tsp salt
  • 1 tbsp butter
  • ⅛ tsp baking powder
  • Vegetable oil for frying

How to make it:
1. Mix cheese, cornstrch, cassava, sugar, eggs, salt, and butter until you get a soft, smooth dough. If you find that it is too dry, add one tablespoon of warm milk at a time until you get the right consistency.
2. Add the baking powder and mix well.
3. Shape the buñuelos by making small balls.
4. Heat up the oil in a deep fryer or large pot and add a few buñuelos at a time.

5. Fry for about 20-25 minutes or until golden brown.

6. Drain with paper towels.
