Festival is something usually found on the streets of Jamaica, it can be eaten alone or with your favorite meat. Many times this can be found at the beaches in Jamaica. Festival is sweet and crispy and it contains just a pinch of cornmeal. In a large bowl, I combine a 1/2 cup of cornmeal, flour, water, one egg, a pinch of salt, 1 tbs of salt, 3 tbs of sugar, one cup of oil and one tbs of vanilla not imitation. I mixed everything until they were well combined together. I kneaded the dough together then divided them equally and shaped them into a long dumpling. I placed a half of cup of oil in my frying pan for five minutes to allow it to get really hot. I placed the festival in the pan one at a time and allowing space in between so they won't stick together. I lowered the heat once they began to brown. I turned them every few minutes until both sides were brown. They began to expand I knew they were done and placed them on a napkin and plate to drain the oil.
