Escovitch Fish
This is called Escovitch Fish it is seasoned well and marinated with a pepper vinegar like seasoning. It is also topped off with colorful bell peppers, carrots and lots of onions. This is usually made for the Good Friday and Easter Sunday it is a tradition for Jamaicans. To season the fish I use fish and meat seasoning, fish seasoning and salt and pepper. I place my fire on high heat with a half of cup of oil. Each side should be cooked for five minutes then places on a paper towel to drain off the oil. While the oil is draining I cut my vegetables and set them aside. Next, I work on adding my vinegar and oil into my frying pan until it begins to boil. Once it boils I add my vegetables and let it simmer for five minutes. Since I have grown to love spicy food since I've been cooking I decided to add a scotch bonnet pepper which is a hot pepper from Jamaica. I stir everything together for two minutes the place my fish in for exactly one minutes and that's all.
