I'm sure everyone has seen the famous zeppole at feasts, carnivals, pizzerias, and family gatherings and on Christmas Eve. This was a favorite dessert for all Italians on Christmas Eve. Some of my favorite memories as a child was going to the feast to get zeppoles. I still go to feast today just for the zeppoles with my children. Are you ready to make some of these zepps with me??? I will help you make these delicious, yummy, satisfying, and excellent doughy dessert.

Ingredients:
2 quarts of vegetable oil for frying
1 cup of flour
2 teaspoons baking soda
1/4 cup of sugar
1 cup of ricotta
1 teaspoon vanilla
2 eggs, beaten good
1 pinch of salt
either powdered sugar or cinnamon sugar or honey(my husband's favorite)

Directions:
Get the oil hot and ready in the deep fryer. In a saucepan combine the flour, salt, sugar, and baking soda. Gradually stir in the eggs, ricotta cheese, and vanilla. Mix slowly over the low heat and don't worry it will be sticky.

Now with a tablespoon drop spoonfuls in one at a time and make sure oil is 375 degrees. The zeppoles should turnover on their own, if not then give them a push. Fry them until they are golden brown. This should take about 3 minutes each. Put them on a paper towel to drain the oil off of them. Put any of the toppings you like most and serve warm.
