
This dish is an easy way to satisfy your family. I can honestly say that it burst with many flavors. I have made this dish over and over through the years and my family was very satisfied. The vegetables change with the season. This dish has been created in many different ways such as: different vegetables, different sauces and different pasta. If you have no time in your life like most of us then this is the dish to make for your family. Boiling pasta is the quickest dinner you can make. The rest is easy. Just follow my simple recipe and instructions and sit down with your family for a great meal!
Let's get started....
Ingredients:
1-lb. of pasta-your choice, I prefer spaghetti or angel hair
1 small bunch of broccoli
1 small zucchini sliced
1 red pepper sliced
1 green pepper sliced
1 onion sliced
Any vegetables that are in season, or your favorite
about 3-5 cloves of garlic crushed
1 or 2 cans of whole tomatoes with juice
1/2 stick of butter
1/4 cup of chicken broth
1/2 cup of heavy cream
1/2 cup of grated cheese(I prefer pecorino romano)
salt and pepper to taste
fresh basil
3 tablespoons of olive oil
Directions:
Boil a large pot of water and put broccoli and any other vegetable you are using, into the boiling water just for a minute each then drain into the colander. save water for the pasta also. I also want you to save 1 cup of the same water for your sauce.
Now in a large sauce pan put the oil and start frying the sliced vegetables with the garlic. This adds lots of flavor to the dish. You can now add the butter also. After you saute these vegetables you may add chicken broth and the 1 cup of pasta water. bring this to a boil and add the tomatoes after you put in the food processor or just crush them. (your choice). Now add the heavy cream after 5 - 10 minutes of cooking. After that you may add the pasta and cheese. When your mixture seems to be at a consistency you like then add fresh basil, salt, and pepper.
You may also add, (shrimp, chicken, etc).
Now get ready to eat a gourmet meal with your family! Oh don't forget the wine!!!
